This recipe is one of my favorites. I love how the flavors complement each other so well. The sauce is not heavy, and the meat is soft with a savory, smoky taste that the vegetables add to.

It seems like there are so many recipes out there that are just fine for one meal, but in the interest of making this dish a full meal we made a double batch. You know what’s weird? There was absolutely no leftovers. That’s pretty cool.

There are a variety of meat substitutes, but this was the first time I have tried them as a regular. Camarena is similar to sausage but with much less meat.
